Pizza- Because I'm Lazy

I know it sounds like more work to make pizza instead of tapping delivery, but trust me, this is super easy, delicious, and you'll have saved a ton of money. Every kid I have - all 5!- will eat this. The Bigs are delighted when I add peppers and mushrooms to a pizza, but one absolutely has to be plain cheese for the Littles. This recipe makes two 10-inch pizzas. With 7 people to feed, I add a bit more to the recipe to get the pizzas bigger. You could also make small individual pizzas, and get the kids involved to make their own. This is a lazy meal for me, because its almost no thought, and I know already that the kids will eat it.

Ingredients for the dough


2 cups all purpose flour

1 packet instant yeast

2 tsp olive oil

1/2 tsp salt

3/4 cup hot water


Jar of pasta/tomato sauce

Shredded mozzarella


Directions


Preheat oven to 425º

Mix flour, yeast, and salt in a big bowl.

Stir in water and oil until blended and dough pulls away from the bowl.

Flour up your hands and turn the dough out onto a floured surface.

Knead for 5 minutes.

Dump back in the bowl, cover with plastic wrap, and let it rise for 30 minutes.


(30 minutes of free time! What to do, what to do. Fold laundry? Load the dishwasher? Personally, there's plenty of Netflix. Or there's always a kid ready to minutely explain his latest Minecraft creation to me. Don't clean the floured surface! You're going to need it again.)


Turn the risen dough out onto the floured surface. Split in half. Roll out one half of the dough into a circle shape, about 11-12 inches wide. Don't stress about the circle shape, get it as close as you can. You'll fix it when you roll the crust.

Using hands and forearms, pick up the dough circle and put on a foil lined baking tray. (If you did not flour your surface, this will be a sad and sticky part for you.)

Roll the edges of the dough towards the center of the circle, forming a crust. To get it looking like a pizza, some parts may be more rolled than others. And that's ok!

Take a fork, and fork little holes in the pizza dough all over the base.

Pour a small bit of olive oil into your bowl. Using a pastry brush or your fingers, brush olive oil all over the base and crust.

Layer tomato sauce over the base.

Layer shredded mozzarella.

Bake for 20 minutes.


I do all the steps for both pizzas at the same time, and they both go in the oven at the same time. At 10 minutes, I switch their places on the oven racks.
