Ingredients
4 chicken bottoms (Since my husband has an issue with bones, I used 6 thighs and 2 chicken breasts. Something for everyone.)
3 potatoes, sliced into thin circles.
2 zucchini, sliced into thin circles. (I did not have zucchini. So I threw a pack of asparagus on the tray. It worked GREAT.)
1 lemon, sliced into thin circles
1/4 cup olive oil
juice of one lemon (or 3 tablespoons lemon juice)
1 teaspoon dried rosemary
1 teaspoon salt
1/2 teaspoon pepper
7 (YES 7) cloves of garlic
Directions
Preheat oven to 425º
Spray the sheet pan with nonstick spray
Place the potatoes and zucchini on the tray. Make spaces for the chicken and put the chicken on the tray. This was tough for me, because I made a lot of chicken. In hindsight, two trays would have been the way to go.
Mix together the oil, lemon juice, rosemary, salt, pepper, and garlic. (I used twice the amount for everything. More chicken = more spice mix)
Drizzle over chicken, potatoes, and zucchini. Add sliced lemon on top.
Bake uncovered for one hour.

Honestly, I expected this to be a slam dunk. The chicken was perfect. The asparagus was lemony. And everyone loves potatoes. But my youngest decided that day was a "yucky day" for everything, and he refused to even try it. Such a weirdo.
I will absolutely make this again. It was easy, simple, and tasted delicious.
