Honey Garlic Glazed Salmon- a failure

We all love salmon. Usually I bake it and add dijon mustard. I always buy it when it's on sale but tend to freeze it if I've already meal planned for the week. I asked a kid to put a salmon pack in the freezer a few days ago. They did, TECHNICALLY, but didn't put the salmon away properly. So look at this stupid thing.


I mean, WHAT THE HELL, KID. Full disclosure, I don't remember which kid, so no one got yelled at. Just a sort of general "are you kidding me" echoing through the house.


It thawed fine. Tonight's dinner was not great. I'm not sure if it was cooking technique or flavor, so I might try it again.


Ingredients


1/3 cup honey

1/4 cup soy sauce

2 tbsp lemon juice

1 tsp red pepper flakes

3 tbsp olive oil, divided

4 6-oz salmon fillets, patted dry

salt

pepper

3 cloves garlic, minced

1 lemon, sliced into rounds


Directions


In a bowl, whisk together honey, soy sauce, lemon juice, and red pepper flakes.

Honey is a little hard at first to whisk. Keep at it.


In a large skillet over medium-high heat, heat 2 tablespoons of oil. (NOTE FROM ME: way too high. This was a huge lie. You'll see why in the pictures.) When oil is hot, add salmon skin side up and season with salt and pepper. Cook salmon until deeply golden, about 6 minutes (LIES- you will absolutely burn the salmon this long) then flip over and add remaining oil.


(So I looked at the salmon after 4 minutes and decided to flip it and it was DARK. Like borderline burned. Cannot imagine doing 6 minutes on med-high heat. If I do this again, I'm going to work a solid medium.)


Add garlic to the skillet and cook until fragrant, about 1 minute. Add the honey mixture and sliced lemons and cook until sauce is reduced by about 1/3. Baste salmon with the sauce.

(Again, on a medium-high heat, the sauce BOILED. Which I'm absolutely certain is not supposed to happen.


Garnish with sliced lemons and serve.

The nine year old liked it. The 6 year old wouldn't touch it. Mr Picky SAID he liked it but left half on his plate, so there's a broken heart score for him. The 14 year old liked it. The 16 year old, the kid who eats everything, did not like it at all. Did not eat it. And in a rarity, did not thank me for dinner.

It was ok. I had lemon juice but no lemons. The sauce was decent but doing a medium high heat honestly just burned everything. I don't think that's the way to go. Instead, I might sear the skin in a skillet to get it crispy, then baste and bake in the oven. Then I would pour the remaining sauce over the salmon when it's done. THAT sounds much better. This did take only 20 minutes so it's worth maybe tweaking.
