Friday Night Dessert- Honey Cake

I try to make a big dessert for Shabbat, so the kids can eat it all weekend. This is one of my favorites. I usually make in a bundt pan so it looks pretty, and this is a cake I use my Kitchen-Aid for, so it's easy. If I'm feeling fancy, I make an orange icing to drip over it, or whipped cream to serve with it.


Ingredients


3 1/2 cups flour

1 tbsp baking powder

1 tsp baking soda

1/2 tsp salt

1 cup vegetable oil

1 cup honey

1 1/2 cup sugar

1/2 cup brown sugar

3 eggs

1 tsp vanilla extract

1 cup coffee

1/2 cup orange juice


Directions


Preheat to 350º


Grease pan well. (VERY WELL. I use a baking spray and probably over do it, but I really want to make sure the cake doesn't stick.)


Combine flour, baking powder, baking soda, and salt.


Add oil, 3/4 of the honey, sugars, eggs, vanilla, coffee, and orange juice. I like this part because I make a travel mug full of coffee, more than is needed for the cake. Which means coffee for me!


Mix well, scraping bowl. Even if you're using the Kitchen-Aid, shut it off every few minutes and scrape the bottom of the bowl. No flour lumps in the bottom!


Pour batter into bundt.


Drizzle remaining honey over batter.


Bake 35-40 minutes. (it's definitely 40 for my oven.)


Let cool 15 minutes before flipping pan and removing cake.

ohhhhhhhhh yeah. Everyone in the family loves this cake. The smaller kids like to eat it for breakfast too, which, why not. Cake for breakfast is the best! The problem is, it really goes stale fast. So if it's not gone by Monday night, I have to throw it out. And even with 7 of us, it's a lot of cake. So bake wisely!
